Created in 1691, the Biscuit Rose de Reims is one of the crowning jewels of the city of Reims. Formerly enjoyed exclusively with a glass of champagne, it has become a symbol of celebration. Today, the biscuit is also used in a number of recipes. Besides having a beautiful pink colour, it is crispy and tender.
