From the Vine to the Winery
Grapes coming from our vines transmit the carefully-controlled culture of the mature slopes of Epernay and the Côte de Blancs (the principal Chardonnay-growing region, south of Epernay, between Chouilly and Bergères-les-Vertus) and of the Marne Valley.
Pressing and racking of the Must are carried out in the traditional way.
Vinification is in temperature-regulated, stainless-steel tanks.
The alcoholic fermentation is carried out at low temperature (between 15 and 17° C) which conserves all of the aromatic finesse.
From the Winery to the Bottle
The blend is 80% Chardonnay, of which half comes from the Grand Cru Commune of Mesnil sur Oger and half from Epernay, and 20% Pinot Noir from Vincelles.
Slow development of the sparkle in the constant temperature of our Cellars.
Ageing on the lees a minimum of 3 years after bottling.
Manual riddling. Dosage 10 g/l of sugar blended with reserve wine, followed by a rest of 3 to 6 months after disgorging.
From the Bottle to the Glass
A delicate yellow with ornate glints of clear gold and pale green.
The effervescence is fine and fresh, the delicate bubbles persistent, the brilliance crystal-clear.
Dried lime flowers dominate the nose with fresh notes of acacia and vine blossom.
Some touches of plump fresh fruits (peaches, ripe apples).
The initial biscuity notes develop richness with time in the glass.
The palate delights in delicate flavours which fully express the floral aromas. The finish is long and fresh with lingering toasty notes. As great champagne years go, this is an exceptionally fresh vintage.
