From the Vine to the Winery
Grapes coming from our vines transmit the carefully-controlled culture of the mature slopes of Epernay, and of the Marne Valley.
Pressing and racking of the Must are carried out in the traditional way.
Vinification is in temperature-regulated, stainless-steel tanks.
The alcoholic fermentation is carried out at low temperature (between 15 and 17° C) which conserves all of the aromatic finesse.
From the Winery to the Bottle
The blend is 60% Chardonnay,20% vin de réserve , and 20% Pinot Noir from Vincelles.
Slow developement of the sparkle in the constant temperature of our Cellars.
Ageing on the lees 18 to 30 months.
Manual riddling. Dosage : between 10 and 15 g/l of sugar blended with reserve wine, followed by resting of 3 to 6 months after disgorging.
From the Bottle to the Glass
Tints of primrose yellow and glints of clear, brilliant gold and green, this vintage reveals the Chardonnay grape from the outset.
The exquisite, light effervescence persists in a fine, continuous stream.
From the ripeness (of the grapes) comes aromas of Virginia tobacco, which blend with dried herbs, scents of dried fruits and honey.
On the palate, the rich aromas combine with prominent notes of orange peel and almonds, revealing a finish of hazlenuts.
This is a champagne full of expression. It could, certainly, offer itself as an apperitif but it wil also accompany poultry and fish dishes perfectly.
